A Classic Reuben Sandwich, there is just nothing quite like it! There are times when I have some serious cravings for a Reuben, maybe because I have Irish ancestry. This Reuben sandwich tastes like the ones served at an Irish pub, super yummy! It really hits the spot and is so quick and easy to make!

This is a great recipe for when you have leftovers from making St. Patrick’s Day Corned Beef and Cabbage. I used the leftover corned beef that I had made in a slow cooker to make my sandwich. You can also use deli corned beef to make your sandwich. You can use store-bought dressing. However, if you don’t have any Thousand Island dressing on hand, you can easily make your own dressing. I have included the recipe for homemade Thousand Island dressing that you can whip up in seconds.

Reuben Sandwich Ingredients

Reuben sandwich ingredients are pretty simple, but they create lots of flavor and texture.

  • corned beef – fully cooked, sliced corned beef – or more if you want a bigger sandwich.
  • marbled rye bread
  • Swiss cheese
  • sauerkraut, drained
  • unsalted butter
  • Thousand Island Dressing – you can use store-bought or homemade. (see below)

Thousand Island Dressing Ingredients

  • mayonnaise
  • ketchup
  • sweet pickle relish
  • lemon juice
  • salt and pepper

How to make a Reuben Sandwich

A Reuben Sandwich is so quick and easy to make! If you would like to make Homemade Thousand Island dressing, just mix all of the ingredients in a small bowl until combined. Poof! You have Thousand Island dressing!

First, butter each slice of bread on one side. On the other side, spread each slice with the dressing and top 1 slice with cheese. On the other slice of bread of cheese, place the corned beef, then put the sauerkraut on top of the corned beef.

In a skillet over low to medium heat, place both slices of bread, buttered side down, in the pan. Cook until the cheese is melted and the bread golden, about 3 – 5 minutes.

With a flat spatula, carefully transfer the side with the corned beef and sauerkraut to a plate. Place the slice of bread with the melted cheese on top of the sauerkraut. Serve with more thousand island dressing on the side for dipping if desired. Note: I cut the sandwich in half before serving.

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1/4 cup sweet pickle relish
  • 1 tbsp lemon juice
  • 1 pinch salt and pepper or to taste

Instructions
