Roasted Breakfast Potatoes that are perfectly seasoned, crispy and delicious!
Roasted breakfast potatoes, or “home fries”, are so easy to make in the oven. Plus, they are healthier, less greasy, and less messy than making them in the skillet. These roasted potatoes don’t have to be served just for breakfast or brunch, they would make a great side dish for dinner as well!
When I go out for breakfast or brunch, I usually tend to shy away from breakfast potatoes because I have this perception that they are not very healthy. The fact that these potatoes are roasted in the oven with olive oil, instead of being fried in grease or butter, makes them a healthier option. Personally, I think they crisp up much nicer in the oven anyway.
I used baby red potatoes to make this recipe. Using red potatoes instead of white potatoes is a healthier option. The skin of red potatoes contains two to three times more antioxidant benefits than white potatoes. You can also substitute sweet potatoes for this recipe and it would add even more nutritional value, not to mention a little sweetness! Roasted Potatoes Ingredients
- baby red potatoes – cut into bite-sized pieces (I use organic baby red potatoes)
- olive oil
- kosher salt or sea salt
- paprika
- garlic powder
- onion powder
- dried thyme
- dried rosemary
- freshly ground pepper to taste
How to make Roasted Breakfast Potatoes
First, preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with foil and spray with nonstick cooking spray. Wash your potatoes, leaving the skin on then cut them into bite-sized pieces. Place the cut potatoes into a large bowl.
Combine the olive oil with all of the rest of the ingredients then pour over the potatoes and toss or stir to coat them. Pour the seasoned potatoes onto the prepared baking sheet.
Bake at 425 degrees Fahrenheit, on the center rack, for 30 – 45 minutes, or until the potatoes are tender and crispy. Stir the potatoes every 15 minutes to help with even browning. Keep an eye on them so they do not burn.
Once the potatoes have finished roasting, carefully remove from the oven, drizzle with a little more olive oil if desired and sprinkle with additional salt and pepper if needed. Serve immediately and enjoy!

- 3/4 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried Thyme
- 1/2 teaspoon dried rosemary
- freshly ground pepper to taste
