Roasting Corn in their husk is super easy and the corn comes out of the oven perfectly cooked every time! While grilled corn on the cob is wonderful, you can achieve similar results in the oven, which is perfect for rainy days and cold weather.

Oven-roasted corn on the cob makes an easy side dish to add to almost any meal. You can eat it plain, slather it with butter, sprinkle on a little salt and pepper, add some cheese, or a variety of other toppings. Roasted corn is also a great addition to so many other recipes. For example, you can add it to salads and pasta dishes, or you can use it to make some yummy Chipotle Corn Salsa or Sweet Potato Tacos, or add the roasted corn kernels to these Healthy Cornbread Muffins!

We went to one of our local farms to get our fresh corn and that is the corn you will see in the pictures for this recipe. Fresh sweet corn tastes so much better than canned or frozen corn, in my opinion. It can even be cut fresh from the cob and added to dishes without being cooked. However, roasting corn in the husk intensifies the corn’s flavor and the corn husk helps to retain the moisture. Plus, using this cooking method could not be any easier. No shucking, soaking, or big pots are required. Fresh corn is all you need… and maybe a little butter.

How to Cook Corn on the Cob in the Oven with Husks

Cooking corn on the cob in the oven with the husks on is super easy! This cooking method does not require shucking, soaking, or any large pots on the stove! You can also cook as many ears of corn that will fit into your oven.

To cook the corn on the cob with husks on, first, preheat your oven to 400 degrees Fahrenheit. While the oven is preheating, you can peel off just the outer layers of the corn husks if they are dirty, leaving the rest of the husks on including the silks. Then rinse the corn. 

Fresh Sweet Corn in Husks

Place the rinsed ears of corn onto a baking sheet or directly on the oven rack about 1 inch apart, and bake for 30 – 35 minutes or until it is cooked to your liking. To test for doneness, carefully remove one of the ears of corn from the oven with oven mitts and pull back a few of the husks just enough to see if they are done. The kernels should be soft, shiny, and tender.

Once the corn is fully cooked, remove the corn and allow it to cool for about 10 minutes, or until cool enough to handle. You can also use a kitchen towel to handle them. Peel down the husks and remove the silks, the silks will come off easily after roasting. You can also use the pulled-back husks as handles for eating.

Serve the roasted corn on the cob with butter and salt or the toppings of your choice. Enjoy!

Notes

I made 4 ears of corn but you can actually cook as many ears of corn that will fit on the rack or your baking sheet.

    Came out just right. Cook 3 ears, and left them in 5 more minutes with the oven off. Tastes great with adobo seasoning.
