How to make Shrimp and Broccoli Foil Packs with Lemon Garlic Butter
Note: If you are using frozen shrimp, thaw them by running under cold water, then pat dry.
Preheat the grill over medium-high heat. Grease or spray 2 large sheets of foil.
Lemon Garlic Butter
Next, make the seasoned lemon garlic butter. Melt the butter in a covered, microwave-safe bowl. Then stir in the minced garlic, lemon juice, oregano, paprika, cayenne, salt, and pepper. Pour over the shrimp and toss to coat.
Prepare the foil packets
Next, place the shrimp and broccoli next to each other on top of the greased foil and pour any remaining garlic butter over the shrimp. Add a lemon wedge.
Seal the tin foil around everything by folding and pinch closed. You want to make a boat so that no liquid escapes.
Grilling Time
Place the foil packs on the preheated grill and shut the lid. Cook for 10 – 15 minutes, or until the shrimp are opaque and fully cooked and the broccoli is tender.
Carefully remove the packs from the grill with mitts and transfer to plates. Garnish with lemon wedges, serve and enjoy!
