Baked Cod with Lemon Butter is a quick and easy, yet impressive restaurant-quality main course that’s great for special occasions and for those busy weeknights as well!
Oven-baked cod is one of my favorite main courses and I make it often since it is simple, low-carb, gluten-free, keto-friendly, and super nutritious. It makes a deliciously healthy seafood dinner! The flavor and texture of the fish are just right and the garlic lemon butter sauce is the perfect pairing.
Codfish goes well with so many things. To complete your meal, try serving it with veggies, like Parmesan Roasted Broccoli, colorful Roasted Ratatouille, simple Roasted Green Beans or some delicious Creamy Cauliflower Risotto. If you don’t mind the calories or the carbs, it’s great served with Parmesan Garlic Bread or some Easy Cheddar Biscuits on the side!

Baked Cod Ingredients
Baked Cod with only 5 ingredients, plus salt and pepper, keeps this dish simple yet flavorful.
- cod loin – I used fresh wild-caught cod loin. Cod loin is thicker and stays moister compared to regular cod fillets. I do recommend using cod loin. However, you can use the thinner fillets and just reduce the baking time, depending on the thickness of your fish. Although I always use fresh fish, you can also use frozen fish with this recipe as long as you defrost it first.
- butter – melted
- lemon juice – Juice of 1 lemon plus extra lemon slices if desired.
- garlic – minced
- Italian seasoning – Blend of dried herbs including basil, thyme, oregano, rosemary, and sage. As an alternative, you can garnish with fresh herbs after baking.
- salt and pepper – I use kosher salt and freshly ground pepper.
How to Bake Cod Loin
To bake cod fish that comes out very succulent, I recommend using fresh cod loin. If you use thinner codfish fillets, reduce the baking time to 10-15 minutes, depending on the thickness of your fish.
First, preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish with nonstick cooking spray. Place the cod fillets into the prepared baking dish.
Garlic Lemon Butter
To make the garlic lemon butter, in a small bowl, melt the butter in the microwave in 30-second intervals. Cover the bowl with a paper towel to help prevent splattering. Stir in the minced garlic and lemon juice to combine. Pour the garlic lemon butter evenly over the fillets.
Season the codfish with salt and pepper then sprinkle with Italian seasoning or herbs. You can also top the fish with fresh lemon slices, which adds additional moisture and creates a beautiful presentation.
Bake at 400 degrees Fahrenheit for 15 – 20 minutes, depending on the thickness of your fish, or until the fish is opaque and flakes easily with a fork.
Carefully remove the baked cod from the oven and spoon the garlic lemon butter over the cod. Serve immediately.

- 1.25 lb. cod loin *see notes
- 1/4 cup butter melted
- 3 tbsp lemon juice Juice of 1 lemon plus lemon slices if desired.
- 1 tbsp minced garlic
- 1/2 tsp Italian seasoning *see notes
- salt and pepper to taste
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish with nonstick cooking spray. Place the cod fillets into the prepared baking dish.

Notes

Depending on your oven, thicker cuts will probably take the full 20 minutes. Although I always use fresh fish, you can also use frozen fish with this recipe as long as you defrost it first.
