Crustless Quiche

This savory crustless quiche is packed with protein, nutrients, and lots of flavor! Plus, no crust means it is also low carb, keto-friendly and gluten-free. It’s so easy to make and can easily be adapted to your personal preferences.

Personally, I love a good quiche. But do you really need the crust? I think not. This crustless quiche with spinach, cheese, and turkey sausage is great without the crust. This quiche also reheats really well. Just pop it into the microwave for a minute or two and you have a quick and easy breakfast, lunch, or brunch. For a nice healthy dinner, just add a healthy salad, like a Greek Cucumber Salad or a delicious Pear Salad. Don’t mind carbs? Try serving this quiche with these Easy Cheddar biscuits. Yum!

This recipe for quiche is not just low carb and gluten-free. I would say, compared to most quiches, it is also low in fat. I did not use any butter and only one tablespoon of oil. Using turkey sausage instead of regular sausage obviously cuts out a lot of fat. If you do not have turkey sausage, ground turkey would work as well. You can also use different types of cheese in this quiche. Other wonderful variations could include Gouda, Gruyere, Swiss, or Cheddar.

Crustless Quiche Ingredients

These crustless quiche ingredients can be adapted to your personal preferences.

  • Olive Oil
  • Garlic – I use organic minced garlic
  • Fresh Baby Spinach – I use organic baby spinach.
  • Turkey Sausage
  • Eggs – I use organic cage-free eggs
  • Goat cheese
  • Parmesan cheese – shredded
  • Paprika
  • Cayenne pepper
  • Sage – Add extra if you like sage or substitute another savory herb.
  • Salt & Pepper –  You can omit the salt to lower the sodium content and sprinkle with salt to each person’s liking once the quiche is served. Depending on the type of cheese you use, you may not need salt.

How to make a Crustless Quiche 

This Crustless Quiche with Spinach and Turkey Sausage is so easy to make!

First, preheat the oven to 350 degrees Fahrenheit. In a large sauté pan, over medium heat, heat olive oil and add the minced garlic. Then, add the turkey sausage to the pan. Then add the sage, cayenne pepper, paprika, salt and pepper to the turkey sausage. Break up the turkey sausage with a large spoon and brown over medium heat until cooked through and no longer pink. Once the turkey sausage is cooked through, add the spinach to the pan and stir to combine with sausage. The spinach may need to be added in batches depending on the size of your pan. In a large mixing bowl, beat the eggs. Then, add the cheese to the eggs and mix. If you have a “log” of goat cheese, use a fork to crumble it into the bowl. With a slotted spoon, add the cooked turkey sausage and spinach to the mixing bowl and stir to combine all the ingredients. Crustless Spinach and Turkey Sausage Quiche

Grease a 9″ pie pan. Then, pour the mixture into the pie pan. Place the pan into the preheated oven and bake at 350 degrees Fahrenheit for 30 – 35 minutes or until eggs are set. Carefully remove the quiche from the oven and allow it to cool for 10 minutes. Serve and enjoy!

  • 1 tbsp olive oil
  • 1 tsp Garlic minced
  • 12 oz. Fresh Baby Spinach
  • 12 oz. Turkey Sausage
  • 5 eggs
  • 4.5 oz. Goat Cheese
  • 1/2 cup Parmesan Cheese freshly shredded
  • 1/4 tsp paprika
  • 1/8 tsp Cayenne Pepper
  • 1/4 tsp Sage
  • 1/4 tsp Kosher Salt optional - add to taste
  • 1/8 tsp freshly ground pepper or to taste

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large sauté pan, over medium heat, heat olive oil and add minced garlic.

  • Grease a 9" pie pan. Pour the mixture into the pie pan.

      I’m happy to hear the quiche is a favorite, thank you! If you would like to freeze the quiche, allow it to cool first then wrap any leftover slices in aluminum foil. Place the quiche in a freezer bag, remove air and seal before storing in the freezer. It should freeze well for up to 2 months. I hope this helps!

  1. This quiche is so delicious! I made sure to squeeze out the extra liquid from my spinach after it cooled a bit (past experience with soggy quiche has taught me that). Since I had a full pound (16oz) of sausage, I added three additional egg whites to make sure I’d have enough egg in the mix. I also made mine with a cup of mozzarella and .5 cup cheddar (no goat cheese near me) and it turned out so good! Thank you for this healthy recipe!
