This Berry Vanilla Yogurt Parfait is perfect for a healthy summer breakfast or dessert! It’s also red, white and blue, which makes it a great treat for the Fourth of July. You could even call it a patriotic parfait! Filled with strawberries, blueberries, granola and vanilla yogurt… it is so light and refreshing on a hot summer day. This parfait is also super quick and easy to whip up! You can use store-bought vanilla yogurt, but I prefer to make my own at home since I can control the vanilla flavor and the level of sweetness. Ingredients needed to make a Berry Vanilla Yogurt Parfait:
- 8 ounces of blueberries – washed
- 8 ounces of strawberries – washed and sliced
- 1 cup granola – Try my Homemade Cinnamon Honey Nut Granola
Vanilla Yogurt:
- 14 ounces of Plain Greek Yogurt
- 2 tablespoons of granulated sugar
- 1 tablespoon of pure vanilla extract
How to make a Berry Vanilla Yogurt Parfait:
First, wash your fruit and slice the strawberries into bite-sized pieces. To make the vanilla yogurt, add the plain Greek yogurt, sugar and vanilla to a mixing bowl and whip to combine until light and fluffy. In a glass or a bowl, layer and alternate the vanilla yogurt, granola, strawberries and blueberries. This recipe will make 2 large parfaits.
