You can make most of the elements in advance, and store them in the fridge until you are ready to make your yummy bowl of goodness! This vegan burrito bowl recipe is filled with healthy plant-based ingredients that can easily be adapted to suit your preferences. The base of the burrito bowl is the chipotle sofritas and cauliflower rice but you can add or omit the toppings of your choice.
- Chipotle Sofritas Tofu – Made with Easy Sofrito Sauce
- Cilantro Lime Cauliflower Rice – Made on a sheet pan for quick and easy cleanup.
- Chipotle Corn Salsa– or Roasted Corn Kernels
- avocado or guacamole
- Salsa or pico de Gallo – or the homemade or store-bought salsa of choice.
- lime wedges – optional
Additional Vegetarian Burrito Toppings
- beans – black beans are a healthy option.
- chopped romaine lettuce – or other greens.
- fajita veggies
- Fiesta Lime Coleslaw – vegetarian.
- Chili Lime Pepitas
- shredded cheese – vegan or regular.
How to Make a Plant Powered Chipotle Burrito Bowl
Most elements of this plant-powered chipotle burrito bowl can be made in advance, making it perfect for weekly meal prep. You can easily omit or add ingredients to create burrito bowl variations.
Chipotle Sofritas and Cauliflower Rice
Make the two base ingredients of the chipotle burrito bowl, Chipotle Sofritas Tofu and Cilantro Lime Cauliflower Rice. The Chipotle Sofritas is made on the stove and the cauliflower rice is made in the oven on a sheet pan, so you won’t have to worry about too many pans on the stove. You can prepare your toppings while the sofritas and cauliflower rice are cooking or prepare them in advance, depending on your topping selections. I always have the salsas made and stored in the fridge, but I wait to slice the avocado until just before adding it to my bowl so it is fresh.
Note: For quick and easy meal prep, you can make the sofritas and cauliflower rice in advance, then store them in an airtight container in the refrigerator until you are ready to assemble your bowl. Both reheat well in the microwave, but I will admit that they taste best when freshly made.
Prepare Toppings of Choice
You can prepare your toppings while the sofritas and cauliflower rice are cooking or prepare them in advance, depending on your topping selections. The Chipotle Corn Salsa and Restaurant Style Salsa can be made in advance. I always have the salsas made and stored in the fridge, but I wait to slice the avocado until just before adding it to my bowl so it is fresh.
Assemble Plant-Based Burrito Bowl
Once you have all of your ingredients ready, assemble your bowl. First, add the cauliflower rice to your bowl then top with chipotle tofu and your toppings of choice. Serve with lime wedges and enjoy!

Cilantro Lime Cauliflower Rice - Click for Recipe
- ¾ cup cauliflower rice per bowl
Burrito Bowl Toppings
- 1 medium avocado sliced or mashed
- 1 medium lime cut into wedges for serving
- 2 tbsp Restaurant Style Salsa or Pico de Gallo (Recipe link in notes)
- 2 tbsp Chipotle Corn Salsa (Recipe link in notes)
- 1 tbsp fresh cilantro as garnish
