This easy corn salsa recipe with sweet corn, spicy jalapenos, and smoky chipotle pepper creates a winning flavor combination! Chipotle corn salsa is perfect with chips or as a topping for so many Mexican dishes, including tacos, burritos, quesadillas, nachos, and more. It’s also wonderful tossed into salads or as a topping for chicken and seafood!

I must admit that I have a weak spot for salsa. I put way too much salsa on so many things. I love Restaurant Style Salsa and fresh Pico de Gallo. There is a popular Mexican restaurant that serves corn salsa that I am a huge fan of. So, I decided to perfect it and make it a true Chipotle Corn Salsa using chipotle chili pepper. You can also make Roasted Corn Salsa using this recipe for Roasted Corn on the Cob. Whichever salsa variation you choose, I hope that you enjoy the Mexican corn salsa!

Here are the Chipotle Corn Salsa recipe ingredients….

  • Corn – I like to use organic sweet corn to make corn salsa. You can use fresh corn kernels or frozen corn, defrosted and well-drained. You can also use canned corn in a pinch. To make roasted corn salsa, use the kernels from this easy roasted corn recipe.
  • red onion – finely chopped.
  • jalapeno – seeded and chopped.
  • fresh cilantro – chopped.
  • chipotle chili pepper – ground dried chipotle pepper.
  • kosher salt
  • lime juice – fresh or bottled.

How to Make Chipotle Corn Salsa

To make Chipotle Corn Salsa, you can use fresh corn, frozen, or roasted corn kernels.

If you are using fresh or frozen corn, lightly cook the corn using your preferred cooking method. Drain and allow the corn to cool completely.

Remove the seeds and chop the jalapeno. Finely chop the onion and cilantro.

Add the corn, chopped jalapeno, onion, and cilantro to a mixing bowl. Sprinkle with the salt and chipotle pepper. Pour or squeeze the lime juice over everything.

Finally, stir everything very well. When in doubt, stir some more. Chill in the refrigerator, in an airtight container, until ready to serve.

Roasted Chipotle Corn Salsa

To make roasted chipotle corn salsa, use the kernels from this Roasted Corn on the Cob Recipe. Allow the corn to cool completely before making the salsa.

Ingredients

  • 2 cups corn fresh, frozen, canned, or roasted corn (see notes)
  • cup red onion finely chopped
  • 1 large jalapeno seeded and chopped
  • 2-3 tablespoons fresh cilantro chopped
  • 2 tablespoons lime juice (juice of 1 lime)
  • ½ teaspoon ground chipotle pepper (or to taste)
  • ½ teaspoon kosher salt (or to taste)

Instructions
