Chipotle Cauliflower Tacos with Creamy Slaw
Chipotle Cauliflower Tacos with Creamy Slaw make a delicious Mexican meal that is perfect for Cinco de Mayo, Taco Tuesdays, or anytime you are in the mood for some good healthy Mexican food.
Roasted chipotle cauliflower tastes so good and makes the perfect vegetarian taco filling. The spice blend combined with roasting the cauliflower creates a smokey, sweet, and spicy flavor that is just plain awesome!
I topped my Chipotle Cauliflower Tacos with Fiesta Lime Slaw, which is a great combination of flavors and textures that compliments the chipotle cauliflower so well. However, these yummy roasted cauliflower tacos can easily be adapted to your personal preferences. For example, I made cute little cauliflower street tacos using small corn tortillas for these photos. They are great as a main course but would also make a wonderful appetizer due to their size. You can add different toppings or create a taco bar so that everyone can create their own taco masterpiece!
Cauliflower Taco Toppings
Here are some more cauliflower taco toppings to try in addition to or in place of the Fiesta Lime Coleslaw. You can also serve them on the side with chips.
- Chili Lime Pepitas – These tasty pumpkin seeds add healthy plant-based protein and flavor!
- Chipotle Corn Salsa – This is great as a topping or on the side with chips.
- Cilantro Lime Crema – You can also use a dollop of Greek yogurt or sour cream.
- Creamy Avocado Dip – Diced avocados or guacamole are other great additions.
- Restaurant Style Salsa – Best on the side with chips.
- Cheese – Mexican cheeses like cotija, manchego, chihuahua, or any other cheese you would like to add.
- Fresh Cilantro

Roasted Cauliflower Taco Ingredients
- cauliflower – I use fresh cauliflower, fresh is best, but you can use frozen cauliflower florets.
- avocado oil – You can also use other oils that have a high smoke point as a substitute.
- chipotle chili pepper – dried and ground chipotle chili powder.
- paprika
- garlic powder – Not garlic salt.
- ground cumin
- ground coriander
- cayenne pepper – This is optional if you want a spicier taco.
- salt
- tortillas – I used street taco corn tortillas to make gluten-free tacos, but any type or size tortilla will work, so use the tortillas of your choice.
- Fiesta Lime Coleslaw – This creamy cilantro lime slaw pairs perfectly with the roasted chipotle cauliflower.
How to make Roasted Chipotle Cauliflower Tacos
To make the Roasted Chipotle Cauliflower Tacos, first, preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with foil and spray with nonstick cooking spray. Note: You may need to use two sheet pans to prevent the cauliflower from overcrowding. You want crispy cauliflower, not soggy cauliflower.
Prepare the cauliflower by washing and chopping it into bite-sized florets. You can also use pre-cut bags of cauliflower florets.
To a small bowl, add the ground chipotle chili powder, paprika, garlic powder, ground cumin, ground coriander, salt, and cayenne pepper if you like spicy. Pour the avocado oil over the seasoning and stir well to combine.
Toss the cauliflower florets in the seasoned oil until they are coated and arrange them in a single layer on the prepared baking sheet, do not crowd. Use 2 sheet pans if necessary.
Roast the cauliflower at 425 degrees Fahrenheit for 25 – 30 minutes, stirring halfway through.
While the cauliflower is in the oven, make the Fiesta Lime Coleslaw. Note: You can make the Fiesta Lime Coleslaw first, and let it chill in the refrigerator while you are preparing the cauliflower.
To build your tacos, you can use warm flour or corn tortillas, or even healthy tortilla alternatives. Spoon the roasted cauliflower onto the tortillas. Add the slaw and any additional toppings that you would like. Serve immediately and enjoy!
Chipotle Cauliflower Tacos
Ingredients
- 1.5 lbs. cauliflower fresh cauliflower florets
- 1/4 cup avocado oil
- 1 teaspoon chipotle chili pepper dried and ground chipotle chili powder.
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt or to taste.
- 1/8 teaspoon cayenne pepper optional
- tortillas
- Fiesta Lime Coleslaw (see notes for recipe)
Instructions
