Roasted Shrimp with garlic and herbs are absolutely delicious and so quick and easy to make. They are ready in just 10 minutes! Plus, these garlicky shrimp are made on a baking sheet pan that is lined, so the clean-up only takes about 2 seconds! Italian Roasted Shrimp are simple, healthy, low carb, gluten-free, and perfect for those busy weeknights!

I love shrimp and I make it often. Shrimp are so versatile, they are protein-rich, low in both calories and fat, and one of the few seafood options that I don’t mind buying frozen. I always keep bags of shrimp on hand in the freezer since they are my go-to protein source when I cannot get fresh seafood. So, I make lots of shrimp using various cooking methods and I can honestly say that this is the easiest way to prepare shrimp and they turn out super yummy!

How to Serve Roasted Shrimp

These succulent shrimp can be served in so many different ways! Serve them as a main course, as an appetizer, or add them to another dish. 

Italian Roasted Shrimp Ingredients

You only need four ingredients to make Italian Roasted Shrimp, plus salt and pepper. 

Italian Roasted Shrimp

  • shrimp – raw shrimp peeled and deveined. I prefer to use colossal, jumbo, or extra-large shrimp. I have also used medium and large shrimp with success, anything smaller does not work as well. Bigger is better! The cooking time will vary depending on the size of your shrimp. See below for cooking times.
  • olive oil 
  • garlic – fresh minced cloves of garlic or jarred minced garlic. 
  • Italian seasoning – Blend of dried herbs including basil, thyme, oregano, rosemary, and sage.
  • salt and pepper – I use kosher salt and freshly ground pepper.

How to Cook Shrimp in the Oven 

When you cook shrimp in the oven on a sheet pan that is lined with foil the clean-up is super quick and easy!

If you are using frozen shrimp, defrost them in the refrigerator overnight or thaw them by running them under cold water for a few minutes.

First, preheat your oven to 400 degrees Fahrenheit. Line a rimmed baking sheet with foil and spray with nonstick cooking spray. In a small bowl, add the olive oil, minced garlic, and Italian seasoning, then stir to combine.

Place the shrimp onto the prepared baking sheet. Pour the olive oil mixture over the shrimp and toss to coat the shrimp. Arrange the shrimp in a single layer on the baking sheet and season with salt and pepper to taste.

Bake at 400 degrees Fahrenheit for 8 – 12 minutes, depending on the size of your shrimp, or until they are opaque and have turned pink. See cooking times by size below.

Shrimp Cooking Times

Shrimp cooking times vary depending on the size of your shrimp. Below are good base times to work with. The average time is about 10 minutes. You will know the shrimp are ready when they are firm, opaque, have turned pink, and begin to curl.

  • medium-size shrimp – 7 to 9 minutes.
  • large and extra-large size shrimp – 8 to 10 minutes.
  • jumbo and colossal size shrimp – 10 to 12 minutes. Some colossal shrimp might need an extra minute or two.

Once the shrimp have finished cooking, transfer to a dish and serve with lemon wedges, cocktail sauce, or toss into another dish and enjoy!

  • 1 tbsp minced garlic 4 - 5 cloves
  • 1 tsp Italian seasoning
  • salt and pepper to taste
