Pork Enchiladas with Homemade Enchilada Sauce are seriously delicious and so easy to make!
Pork Enchiladas
These Pork Enchiladas are made using my recipe for Mexican Pulled Pork Carnitas and my quick and easy homemade enchilada sauce that is super flavorful. Tender and juicy pulled pork, yummy sauce, melty cheese… I am seriously in love! The Enchilada sauce is the best that I have ever tasted!
I love enchiladas and these were so good that I could not stop eating them! They are better than the ones served at my favorite Mexican restaurant! I made these enchiladas using my recipe for carnitas, which has instructions for both the slow cooker and the Instant Pot. The enchilada sauce is so much better than store-bought and really easy to make. The chipotle chili pepper gives it a subtle smoky flavor that is so good! Please make this enchilada sauce, you will be so glad that you did.
If you would like to make some yummy chicken enchiladas instead, you can use this recipe with my Slow Cooker Shredded Mexican Chicken. You can also use Ground Turkey Taco Meat as the filling, which is super delicious as well. I hope that you enjoy the enchiladas and the sauce!
Enchilada Toppings
I love toppings! These pork enchiladas are great “as-is”, but you can also top them with additional condiments if you would like. You can also serve them with chips and dip on the side or as an appetizer. Here are a few ideas.
- Cilantro Lime Cauliflower Rice – Great inside the enchiladas or served on the side.
- Fiesta Lime Coleslaw – A great side dish that pairs really well!
- Chili Lime Pepitas
- Chipotle Corn Salsa
- Cilantro Lime Crema
- Creamy Avocado Dip
- Restaurant Style Salsa – on the side with chips!
- Spanish Cauliflower Rice– Another great enchilada filling or side dish!

Mexican Pulled Pork Enchiladas Ingredients
- Carnitas – Mexican Pulled Pork – This recipe is for both a slow cooker or an Instant Pot.
- tortillas of your choice. Flour, corn or healthy alternatives all work.
- shredded cheese – Mexican blend, chihuahua cheese, or cheese of your choice.
- enchilada sauce (see below)
Homemade Enchilada Sauce
- olive oil
- all-purpose flour
- chili powder
- garlic powder
- ground cumin
- chipotle chili pepper
- kosher salt
- tomato paste
- chicken broth
How to Make Pork Enchiladas
First, make the Mexican Pork Carnitas, which has instructions for both the slow cooker and Instant Pot. While the carnitas is cooking, make the enchilada sauce. (see below)
How to Make the Best Enchilada Sauce from Scratch
In a small saucepan, heat oil over medium heat. Whisk in flour and seasoning to combine. Whisk in tomato paste. Slowly whisk in broth. Bring to a simmer and simmer for 8 – 12 minutes or until the sauce has thickened. Not too thick, it will thicken more while baking.
Preheat your oven to 350 degrees Fahrenheit. Spray a 9 x 11 baking dish with non-stick cooking spray.
Assemble your enchiladas. Lay out the tortillas and spread a thin layer of the enchilada sauce over the tortilla. Top with carnitas and shredded cheese down the center of the tortilla, then fold over both sides. Place them into the prepared baking dish. Pour over the enchilada sauce. Finally, top with the shredded cheese.
Bake at 350 degrees for 20 minutes or until sauce and cheese are bubbly.
Garnish with fresh cilantro and serve as is or with the toppings of your choice.

Ingredients
- 1/2 batch carnitas recipe link in notes
- 4 - 8 small or large tortillas depends on the size of tortillas and how much you stuff them.
- 2 cups shredded cheese Mexican blend, chihuahua cheese, or cheese of your choice.
- 1 batch enchilada sauce see below
Enchilada Sauce:
- 2 tablespoons olive oil
- 2 tablespoons all purpose flour
- 2 tablespoons chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chipotle chili pepper
- 1/2 teaspoon Kosher Salt
- 2 tablespoons Tomato Paste
- 2 cups chicken broth
Instructions

Super yummy! I had to use boneless country pork ribs, couldn’t find the pork shoulder. I followed crock pot directions, I also had to sub red chili flakes cause I couldn’t find my cayenne. ??♀️ Sauce was a little on the spicy side, which I don’t mind. But probably from red pepper flakes. I used corn tortillas to minimize the gluten. The family loved it! Will make again!
