Make the roasted Spanish peanuts and allow them to cool completely. You can make the dry-roasted or salted peanut recipe variation if you want salted peanut butter. (I make them in advance so they are ready.) Add the roasted peanuts to a food processor and blend, stopping to scrape down the sides of the bowl every 30 seconds, until you have smooth, creamy peanut butter, crunchy peanut butter, or the consistency you want. This process does require a little patience and many rounds of processing.
Blend in additional ingredients if desired. (See Notes)
Store the peanut butter in an airtight container or jar at room temperature or in the refrigerator until ready to enjoy!
Spanish Peanuts make the best peanut butter since they are naturally sweeter than regular peanuts, yet they have only 1 net carb per serving compared to the 3 net carbs that common peanuts have. Spanish peanuts are also smaller, making them easier to blend into smooth, creamy peanut butter.
Tips:
- I usually make a double batch of roasted peanuts or more, and I buy my peanuts in bulk, since we eat a lot of peanut butter and I make different kinds of roasted peanuts, including Sweet Cinnamon Peanuts and Spicy Peanuts.
- You can make healthy, all-natural peanut butter or blend in additional ingredients like sweeteners such as honey or maple syrup, or add things like pumpkin spice to make pumpkin spice peanut butter or your own peanut butter flavor, which is super fun!
- This roasted Spanish peanut butter is wonderful spread on bread or used in recipes to make yummy desserts, breakfasts, or snacks! You can also use it to make salad dressing, add it to sauce for pasta and noodles, or even use it as a substitute for tahini to make hummus.
