This Thai curry recipe includes a mild Thai red curry, a spicy Thai curry, and Panang curry. All of the vegetable Thai curries are delicious!

Red Thai curry is easy to make and ready in 15 minutes! This Thai red curry recipe is vegetarian, vegan, gluten-free, and super yummy! It can be a mild or spicy Thai curry, depending on your preference, and can also be Panang curry with the addition of a few simple ingredients. This quick and easy Thai curry is perfect for busy weeknights when you are in the mood for Thai cuisine, since this red curry with vegetables is healthier and faster than take-out.

Flavors of Thai curries can vary. Thai red curry is made with red curry paste, coconut milk, and aromatic ingredients like garlic and ginger to create a balanced flavor of savory, sweet, and spicy. I garnish my curry with chopped Roasted Peanuts and spicy red chili peppers to make a spicy peanut curry, then serve it over Cilantro Lime Cauliflower Rice to keep it healthy, low-calorie, and low-carb. However, even though this is a vegan Thai curry recipe, you can easily add seafood or chicken to your curry if desired. I have included more ideas below. I hope you enjoy!

Red Thai Curry Recipe Ingredients

These plant-based red Thai curry recipe ingredients create a vegan Thai vegetable curry that is healthy and gluten-free. However, it is easy to add the protein of your choice.
Vegetable Red Thai Curry

  • fresh veggies – Broccoli, snow pea pods, spinach, or your choice of fresh vegetables.
  • coconut milk – The higher fat content, the creamier it will be. 
  • red curry paste
  • brown sugar – I use stevia brown sugar to make a low-carb Thai curry.
  • garlic – minced or grated
  • ginger – minced or grated
  • cinnamon – I use ground Ceylon cinnamon.
  • coriander – ground coriander
  • salt and pepper – add to taste.

Panang Curry

Panang curry is a popular peanut curry in Thailand. To make this recipe a mild Panang Thai curry, you will add nutmeg and cumin to the spices, a little lime juice, and crushed roasted peanuts to the recipe. This variation of Thai Panang curry is also vegan, since it does not include fish or shrimp sauce, yet it is flavorful and delicious!

How to Make Thai Red Curry

To make this Thai red curry, add the coconut milk to a non-stick skillet and bring to a simmer over medium heat.

Once at a simmer, reduce the heat to low and stir in the red curry paste, brown sugar, and seasonings, then keep at a simmer for 5 minutes, stirring occasionally.

Add the fresh veggies to the curry and cook for 5 minutes.

Season with salt and pepper to taste, then garnish with your choice of chopped peanuts and other optional garnishes or toppings. Serve over rice or cauliflower rice and enjoy!

Ingredients

Notes

I serve my Thai curry over cauliflower rice to keep it healthy, low-calorie, and low-carb. You can easily make a double batch of the Thai curry sauce and add additional protein, like tofu, chicken, or seafood, if desired.

Spicy Thai Curry

To make this a spicy Thai curry, add 1/8 teaspoon of cayenne pepper with the rest of the spices, then add a sliced hot red chili pepper as garnish.

Panang Curry

To make this recipe a mild Panang curry, you will add 1/4 teaspoon of nutmeg and cumin to the spices, a teaspoon of lime juice when you add the curry paste, and garnish the curry with 1/2 cup of crushed roasted peanuts. This is a plant-based, vegan Panang curry recipe variation, since it does not include fish or shrimp sauce.
