Cauliflower Rice Burrito Bowl
I make cauliflower rice burrito bowls using one of the recipes below to make a keto burrito bowl. You can also use regular rice or the grain of your choice as the burrito bowl base.
Build Your Burrito Bowl
To build your burrito bowl, first choose and prepare the burrito bowl ingredients. Most of the components can be made in advance, making it perfect for weekly meal prep. Prepare and store the components in separate airtight containers in the refrigerator. Then you can quickly assemble your burrito bowls throughout the week.
- Choose and prepare the base, protein, and toppings of choice.
- Build your burrito bowl
Add the cauliflower rice or grain to the bowl, then add the protein and toppings of choice. Garnish with fresh cilantro if desired and serve with lime wedges for squeezing. Enjoy!

- ½ cup protein (per bowl - see notes for options)
- ¾ cup cilantro lime cauliflower rice (per bowl - see notes)
Burrito Bowl Toppings (Options in notes. Choose as many as you want.)
- 1 medium avocado sliced or mashed
- 1 medium lime (cut into wedges for serving)
- 1 tbsp fresh cilantro (as garnish)
Instructions
