This easy 1-ingredient broccoli soup recipe is made with fresh broccoli, plus salted water, yet it is thick, creamy, and tastes delicious! You can use frozen broccoli, but fresh broccoli tastes so much better, in my opinion. I also add various seasonings for flavor and to change it up depending on what I am in the mood for.
1 Ingredient Broccoli Soup
Broccoli soup is healthy and super nutritious! It is packed with vitamins, minerals, fiber, and antioxidants. Broccoli is an excellent source of vitamin C, containing more than oranges, and provides numerous health benefits, including boosting the immune system, improving heart health, and aiding digestion.

This 1-ingredient broccoli soup is the perfect soup base for toppings, but is also a warm and comforting bowl of yummy goodness served as is. So make a big batch and enjoy!

There are a variety of broccoli soup toppings to choose from to create different flavor profiles, including the Asian broccoli soup and Italian Broccoli soup variations below. 

Asian Broccoli Soup

To make an Asian broccoli soup variation, top it with Garlic Sesame Broccoli, which adds flavor and texture. For extra plant-based protein, add some Roasted Edamame. How to Make Broccoli Soup with 1 Ingredient

To make broccoli soup, fill a pot with 2 cups of water, then add 1/2 teaspoon of salt. Bring the salted water to a boil, then add the broccoli to the pot. Cover the pot with a lid, then boil for 5 minutes.

Turn off the heat and allow the broccoli to steam for 10 minutes. Remove the lid and puree the broccoli with an immersion blender until it is smooth or you reach your desired consistency. Season with additional salt and pepper to taste, along with any other desired seasonings, then stir well to combine or blend again. (see notes)

Tip: If you would like to thicken your soup, turn the heat on low and simmer uncovered until the soup thickens to your liking.

Serve with any desired toppings and enjoy!

Instructions
