I love a tasty fresh salad and this Greek salad recipe with fresh cucumbers, cherry tomatoes, olives, feta cheese, and a simple Greek vinaigrette tastes so good and is so quick and easy to make!
This Greek cucumber and tomato salad is packed with nutrients and is so refreshing and hydrating. It is also low in calories, carbohydrates, and it’s gluten-free. So, it fits into almost any healthy eating plan including a low-carb, keto, or Mediterranean diet. It is wonderful served as a side dish or appetizer. However, it is also great for a light, yet satisfying vegetarian lunch. It will serve several people and it can be made in advance, so it is perfect for summer parties as well.
A Greek cucumber salad pairs well with so many things, like this healthy falafel, and it’s wonderful with seafood, like Greek Shrimp Saganaki, or try these Italian Roasted Shrimp or some yummy Cedar Plank Salmon. Greek Cucumber Salad Ingredients
You only need 4 ingredients to make a Greek cucumber salad, plus the Greek dressing and any extras that you would like to add.
- cucumbers – seedless English cucumbers work best.
- tomatoes – cherry or grape.
- black olives – you can also use Kalamata olives. I use sliced olives, but you can halve them or even leave them whole if you would prefer.
- feta cheese – crumbles.
- Greek dressing – store-bought or homemade. (see below)
optional extras
- fresh oregano – finely chopped
- red onions – chopped or sliced. Traditional Greek salads usually have onions. I did not add them to my salad because I am not a fan of onions. If you like onions, I recommend adding them.
- salt and pepper to taste
Greek Salad Dressing Ingredients
- olive oil
- red wine vinegar
- lemon juice
- minced garlic
- dried oregano
- Dijon mustard
- kosher salt
- freshly ground pepper
How to Make a Greek Cucumber Salad
To make a Greek Cucumber Salad, first, make the dressing unless you are using store-bought dressing. You can make the dressing in advance and refrigerate it in an airtight container until ready to use.
See below for instructions on how to make the Greek vinaigrette.
Next, wash and slice your veggies. Cut the cucumber lengthwise, then slice. Halve the cherry tomatoes. Add the sliced cucumber, cherry tomatoes, olives, and feta cheese to a large mixing or salad bowl. If you are using onions, add them as well.
Greek Dressing
To make Greek dressing, add the olive oil, red wine vinegar, lemon juice, garlic, oregano, mustard, salt, and pepper to a bowl and whisk to combine.
Drizzle the Greek dressing over the salad and gently toss to combine. Season with salt and pepper to taste if needed and garnish with fresh oregano if desired. Serve and enjoy!
Greek Cucumber Salad
Ingredients
- 2 seedless English cucumbers cut lengthwise, then slice.
- 1 pint cherry tomatoes or grape tomatoes, halved.
- 4 oz. black olives or Kalamata olives, sliced, halved or whole.
- 4 oz. feta cheese crumbles
- 3/4 cup Greek dressing store-bought or homemade (see below)
Greek Dressing Ingredients
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tbsp lemon juice
- 1 tsp minced garlic 2 cloves minced
- 1 tsp dried oregano
- 1/2 tsp Dijon mustard
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground pepper

- fresh oregano finely chopped
- red onions chopped or sliced
- salt and pepper to taste
Instructions
- Add the sliced cucumber, cherry tomatoes, olives, and feta cheese to a large mixing or salad bowl. If you are using onions, add them as well.
