Shrimp Fajita Cauliflower Rice is an easy 30-minute sheet pan dinner that is healthy, low-carb, keto-friendly, gluten-free, and super yummy!

This shrimp fajita cauliflower rice bowl is flavorful, colorful, and packed with lots of healthy nutrients, protein, and fiber. It is more nutritious and filling than traditional shrimp fajitas that are served with tortillas, but it is lower in carbohydrates and calories. Everything is baked in the oven on lined sheet pans for quick and easy clean-up and you can have it ready in as little as 30 minutes, making it a great dinner option for busy weeknights.

Shrimp fajitas are one of my personal favorites. It is what I would order if I went to a nice Mexican or Tex-Mex restaurant. But to be honest, I prefer this shrimp fajita cauliflower rice. It has so much flavor, is more satisfying and I feel better about all of the healthy vegetables that I am consuming. Plus, I can still add all of my favorite fajita toppings, I love adding some avocado to my fajita bowl! This tasty bowl of goodness is a great way to add more veggies to your diet while cutting back on calories and carbs.

Shrimp Fajita Cauliflower Rice Recipe Ingredients 

  • shrimp – I use medium or large raw tail-off shrimp that are already peeled and deveined. You can also use bigger shrimp by adding an extra couple of minutes to the baking time. If you are using frozen shrimp, defrost them in the refrigerator overnight or thaw them by running them under cold water. You can buy tail-off shrimp or remove the tails yourself.
  • cauliflower – I use fresh riced cauliflower. You can buy pre-riced cauliflower or rice cauliflower florets in a food processor. You can also use defrosted frozen cauliflower rice that has been drained with this recipe but fresh cauliflower is best.
  • bell peppers – choose any combination of red, green, yellow, or orange peppers sliced about 1/3 inch thick.
  • onion – white, yellow, or red onion sliced about 1/3 inch thick.
  • avocado oil – You can use olive oil as a substitute, however, avocado oil works best since it has a higher smoke point.
  • chili powder – I also add chipotle chili powder for extra heat and a nice smokey flavor. You can also add cayenne pepper if you like spicy.
  • garlic powder
  • cumin
  • oregano
  • paprika
  • lime juice – fresh lime juice is best but you can use bottled juice as well. I serve mine with lime wedges on the side to squeeze extra juice over the shrimp and rice.
  • cilantro – chopped fresh cilantro.
  • salt & pepper

How to Make Sheet Pan Shrimp Fajita Cauliflower Rice

To make sheet pan shrimp fajita cauliflower rice, first, preheat your oven to 400 degrees Fahrenheit. Line 2 large, rimmed sheet pans with foil and spray with non-stick cooking spray. Having all of the ingredients ready when you begin makes things quick and easy. You will start by preparing the cauliflower rice, then make the shrimp fajita mixture while the cauliflower is in the oven. Note: This recipe was created by modifying and combining my Baked Shrimp Fajitas Recipe and my Cilantro Lime Cauliflower Rice Recipe.

Fajita Cauliflower Rice

First, make the sheet pan fajita cauliflower rice. Place the riced cauliflower onto the prepared baking sheet. Tip: If your cauliflower is not already “riced”, you can do it yourself a couple of different ways. Use a food processor to grate cauliflower florets into a “rice” texture by pulsing in 5-second intervals until you reach your desired consistency.

Add the garlic powder, salt, and pepper to a small bowl then pour in the avocado oil and lime juice, then stir to combine. Pour the mixture over the riced cauliflower and stir to coat, then spread the cauliflower rice into an even layer. Tip: You can also omit the salt and pepper from the oil mixture and season the cauliflower rice to your personal preference once it has finished baking.

Place the prepared baking sheet of cauliflower rice onto the middle rack and bake at 400 degrees Fahrenheit for 10 minutes, then stir when it is time to add the shrimp to the oven. Make the shrimp fajita mixture while the cauliflower is in the oven.

Next, make the shrimp fajita mixture while the cauliflower is in the oven. Add the chili powder, garlic powder, cumin, salt, pepper, oregano, paprika, and chipotle chili powder to a small bowl, then add the avocado oil and stir to combine. 

Add the shrimp, sliced bell peppers, and sliced onion to a large bowl, then pour the seasoned oil blend over the mixture and stir to combine. Pour the fajita mixture onto the prepared sheet pan and spread in a single layer. You can also mix everything on the sheet pan if you would prefer.

Stir the cauliflower rice, then return to the middle rack to continue baking and place the shrimp fajita mixture on the top rack. Bake everything for 10 minutes, or until the shrimp are pink and opaque, and the cauliflower is tender. To add a little char to the shrimp and peppers, turn the broiler on for about 2 – 3 minutes, and watch so that it does not burn.

Once everything has finished baking, carefully remove both sheet pans from the oven. Transfer the cauliflower rice to a serving dish then top with the shrimp fajita mixture. Squeeze fresh lime juice over the shrimp and sprinkle with freshly chopped cilantro. Serve with any additional toppings of your choice and enjoy!

  • 2 tablespoons lime juice juice of 2 limes.
  • 1 teaspoon garlic powder

  • 1/4 teaspoon chipotle chili powder or substitute 1/8 tsp of cayenne.*
