Asian Slaw
This crunchy Asian slaw has a delicious Thai peanut dressing that is super quick and easy to make! Colorful and vibrant, this healthy Asian salad is made with fresh vegetables and lots of protein to create a coleslaw that can be served as an appetizer, side dish, or even a complete meal!
Asian coleslaw is one of my favorite salads, and I love the Asian peanut dressing! I usually eat it by itself or mixed with some greens, changing or adding extra toppings for variety, which I have listed in the ingredient section below. However, it pairs well with other Asian flavors and it is a great way to add lots of veggies to a meal. Try serving it as a side salad with these Hawaiian Pineapple Chicken Kabobs, this healthy Seasame Glazed Salmon, or some easy Vegan Pad Thai. It can also be used as a filling to make Asian tacos or paired with some Roasted Garlic Sesame Broccoli for a beautiful plant-based meal. Asian Slaw Ingredients
This easy Asian Slaw recipe with Thai Peanut dressing is made with healthy vegan ingredients including cabbage, carrots, nuts, and seeds.
- coleslaw – I use a bag of organic coleslaw mix that includes shredded green cabbage, red cabbage, and carrots.
- edamame – shelled edamame that has been cooked and cooled. You can buy bags of frozen mukimame (shelled edamame) and cook it in the microwave for a couple of minutes, then allow it to cool.
- peanuts – I use dry roasted peanuts.
- toasted sesame seeds
- spring onions – sliced thin.
- peanut dressing – See ingredients list below.
Optional Extra Ingredients
- Chili Lime Pepitas – Adds extra protein, flavor, and crunch!
- Garlic Roasted Almonds – Sliced or chopped.
- fresh herbs – chopped Thai basil and cilantro are great options!
- avocado – I love adding avocado for extra creaminess and healthy fat, and it is the extra topping that I add most often!
- crushed red pepper – to make it a spicy Asian slaw!
- mixed greens – chopped or shredded greens of choice.
- salt and pepper – I do not add any but you can add to taste if desired.
Thai Peanut Dressing Ingredients
- peanut butter – creamy peanut butter works best. I use all-natural creamy peanut butter.
- tamari – I use gluten-free organic tamari but you can use soy sauce as a substitute.
- apple cider vinegar
- lime juice
- toasted sesame oil
- brown sugar – I use stevia brown sugar to keep it low-carb. Regular brown sugar works as well.
- Sriracha
- garlic powder
- ground ginger
How to Make Asian Slaw
Making this Asian slaw is so easy and it comes together really quickly. You can easily adjust the ingredients or make a larger batch depending on your needs.
First, make the Thai Peanut Dressing. The peanut dressing can also be made ahead of time and stored in an air-tight container in the fridge.
To make the peanut dressing, add all of the peanut dressing ingredients to a bowl. Add the dry ingredients first then pour in the liquids. Whisk or stir well to combine until the dressing is smooth.
Add the coleslaw to a large mixing bowl. Pour the dressing over the cabbage and toss or stir well to combine. Add the rest of the ingredients and any extras to the bowl and toss to combine. Do a taste test and season with salt and pepper if desired. Serve immediately and enjoy!
Asian Slaw with Peanut Dressing
Ingredients
- 16 ounces coleslaw mix - I use a bag of organic coleslaw with shredded green cabbage, red cabbage, and carrots.
- 2 medium spring onions - or scallions sliced thin.
- ½ cup edamame - shelled edamame that has been cooked and cooled. *see notes*
- ½ cup peanuts - I use dry roasted peanuts.
- 1 - 2 tablespoons toasted sesame seeds
Peanut Dressing
- 2 tablespoons peanut butter creamy peanut butter works best.
- 2 tablespoons tamari or soy sauce.
- 2 tablespoons apple cider vinegar
- 2 tablespoons lime juice
- 1 tablespoon toasted sesame oil
- 1 tablespoon brown sugar I use stevia brown sugar
- 1 teaspoon Sriracha
- ½ teaspoon garlic powder
- ½ teaspoon ground ginger
Instructions
- Add all of the peanut dressing ingredients to a bowl. Add the dry ingredients first then pour in the liquids. Whisk or stir well to combine until the dressing is smooth. (see notes)
- Add the cabbage coleslaw to a large mixing bowl. Pour the peanut dressing over the cabbage and toss or stir well to combine. Add the rest of the ingredients and any extras (see notes) to the bowl and toss to combine. Do a taste test and season with salt and pepper if desired. Serve immediately and enjoy!
