A green salad is a beautiful way to celebrate the arrival of spring, when life returns, and all things green! I love spring, and I always feel good eating something green. So, in anticipation of the arrival of spring, let’s make a delicious green salad using fresh spring ingredients. Yum!

Green things are good for you, and this healthy green salad is packed with plant-based protein, fiber, vitamins, antioxidants, and lots of flavor for a super green power salad that is also super yummy! Plus, this vegetarian salad uses ingredients that are low-carb and keto-friendly.

This spring salad is a wonderful addition to any meal, but it can also stand on its own for lunch, brunch, or as a light dinner salad. To make a big dinner salad, you can add extra protein such as falafelchicken, tofu, or shrimp, and it is great served with soup and bread or as a side salad with pasta. I have included a variety of easy homemade dressing options to choose from and some additional or alternative toppings as well. How to Make a Spring Green Salad

To make a Spring Green Salad, first, prepare your ingredients and the salad dressing of your choice (see list for options). You can make most, if not all, of the salad components in advance for quick and easy meal prep.

Make the asparagus and green beans in advance. You can also use fresh raw asparagus and/or green beans that are washed and trimmed. Also, make the French Toasted Almonds or the nuts of your choice in advance (see list for options).

Next, prepare the rest of your ingredients. Slice the avocado and shave or grate the cheese, then prepare any additional ingredients that you would like to add.

Finally, add the greens to a salad bowl, then add the sliced avocado, trimmed and chopped asparagus or green beans, nuts, cheese, and any additional ingredients or protein of choice. Drizzle the dressing of over the salad and toss to combine. Add salt and pepper to taste. Serve immediately and enjoy!

Ingredients

  • 8 ounces dark leafy greens (see notes)
  • 4 ounces Asparagus and/or green beans (see notes)
  • 1 medium avocado sliced
  • ¼ cup French Toasted Almonds or nuts of choice(see notes)
  • ¼ cup cheese (see notes)
  • ¼ cup salad dressing of choice (see notes for list)

Optional Garnish

  • spring onions thinly sliced
  • fresh herbs chopped
  • salt and pepper (to taste)
